A lively, fresh and bold bubbly with notes of peach yoghurt and a touch of vanilla pod. Its a traditional Frizzanté (AKA PetNat) made in the Col-fondo method from all of the estate’s white varieties including some very rare, near extinct ones. The grapes were sourced from Five plots: Cagnini, Fornio, Colle San Giuseppe, Le Anime and a number other small plots, all growing on sandy, clayey and red earth.
Its lovely on its own as an aperitif and also with salami on sourdough bread. Serve it cold. Very good the next day (and even the following, just replace the crown cap tightly and store in the fridge)
The work in the vineyard is organic and the wine is carefully made in very low intervention. Leo, the man behind the Bulli winery is a class act producing lively, classy wines. The wine region is Emilia-Romagna, one if Italy’s most luscious and generous parts and home to some pioneers in Italy’s maceration wine (orange wine).
